Poha is flattened rice that is used as breakfast in India. Poha contains a lot of vitamins, minerals and nutrients in every serving. It consists of energy giving carbohydrates, protein, fiber and healthy fats. It's rich in iron, B-vitamins, magnesium, and much more. These poha cutlets are a great snack and they can be a great way to add more veggies to your diet. Use any veggies of your choice. Here I used carrots, corn, green beans, and potatoes.
INGREDIENTS
Poha 2 Cups
Veggies 2 Cups
Rice flour 1/2 Cup
Cumin 1 Tsp
Coriander 1 Tsp
Ajwain 1 tsp
Ginger (grated) 1 Tbsp
Onion (chopped) 1/2
Salt & Pepper to taste
Ghee as needed
INSTRUCTIONS
Soak poha in water for 20-30 minutes.
Chop all the veggies and steam or boil them until tender.
Once veggies are cooked and cooled, mash it.
Strain poha and remove excess water by pressing it.
Mix poha with mashed veggies, spices, grated ginger, chopped onion and rice flour.
Shape them into round or oval patties.
Pan fry them in a pan with some ghee.
Serve warm with cilantro or tamarind chutney. Enjoy!
