Pinni is a healthy and delicious sweet made in Punjab (North India) during the months of winter. It is traditionally made with wheat flour, ghee and loads of nuts and seeds. Jaggery or sugar is used as a sweetener.
Over time this recipe became so versatile. There are so many alternatives that can be used to make this recipe. You can add as much or as little variety of ingredients. Here I list some options for various ingredients.
For flour you can use wheat, oats, chickpea or millet (Ragi) flour.
For sugar you can use dates, raisins or jaggery powder.
For oil you can use butter, ghee or coconut oil.
For seeds you can use pumpkin, sesame, sunflower, flax or chia seeds.
INGREDIENTS
Flour 2 cups
Oil/Butter/ghee 3/4-1 cup
Nuts 1 cup
Sugar 1/2 cup or less
Cardamom 1/2 tsp
OPTIONAL INGREDIENTS
Coconut powder 1/4 cup
Seeds 1/4 cup
INSTRUCTIONS
Start by roasting the nuts and seeds one by one and keep them aside to cool down. They can be cut into pieces or they can be grinded into fine powder. (Raisins and chopped dates can be added to this nut mixture)
Next melt ghee, butter or choice of oil and add flour to it. Roast it on medium to low flame and stirring constantly. It takes about 15 minutes or so to roast 2 cups of flour.
Once this mixture is roasted, add the nuts and seeds to it.
Let this mixture cool down a bit before adding sugar or jaggery. (The mixture will release water if sugar is added when hot, which we want to avoid)
Once its cool and easy to handle with hands add sugar and mix thoroughly.
Make balls by taking and pressing big spoonful of mixture in your hands.
Serve these with hot tea or milk and Enjoy!
