Falafel is a Mediterranean dish that came from Middle Eastern countries. It's a simple recipe with chickpeas as the main ingredient, and it's loaded with protein, flavor, herbs, spices, and fresh ingredients. It is traditionally fried, but it can be baked or pan-fried. It tastes good either way you make it. It can be stored in the fridge for 4-5 days and in the freezer for 1-2 months.


INGREDIENTS
Chickpeas 1 cup
Onion 1/2 diced
Garlic 4 cloves minced
Ginger 1 inch minced
Cilantro 1 cup chopped
Cumin seeds 1 tsp
Coriander powder 1 tsp
Green chilly 1 chopped
Chickpea flour 2 tbsp
Baking soda 1/2 tsp
Salt & Pepper to taste
Oil as needed

INSTRUCTIONS
Soak chickpeas over-night. (8-12 hours)
Drain the water from chickpeas and add them to the food processor along with the rest of the ingredients.
Pulse a few times until the mixture is well combined.
Grind the mixture until grainy texture but not a paste.
Oil or line the tray with parchment paper.
Make small patties out of the mixture and place them on the prepared tray.
Brush them with oil.
Bake them at 350 F for 25-30 minutes or until slightly golden brown. (Flip half way through for even cooking)

Enjoy these on top of salads, with pita bread, hummus, or with your favorite sauce.
