This bread is made from besan aka chickpea flour, and sooji aka semolina. (For gluten free options, feel free to add almond flour or oat flour instead of semolina). This bread is an excellent combination of veggies and spices. It's a really easy recipe, and you can use any of your favorite veggies. It is a well-balanced dish with protein, carbs, and fat.
INGREDIENTS
Besan(chickpea flour)1 cup
Sooji (semolina) 1 cup
Potato 2 shredded
Onion 1 medium chopped
Cilantro 1 cup chopped
Cumin seeds 1 tsp
Baking powder or Eno 1 tsp
Oil 1 tbsp
Water 1-1/2 cup
Salt and Pepper to taste
Extra oil or ghee for optional step
INSTRUCTIONS
Pre-heat the oven to 350 F.
Mix all the dry ingredients like besan, sooji, cumin seeds, salt, and pepper.
Add potato, onions, cilantro, oil, and mix well.
Add water, and mix the mixture. Let it sit for 20 minutes. (Adjust the water accordingly. The mixture should not be too runny or too dry)
Add baking soda or Eno right before baking the batter.
Pour the mixture into 9 X 9 pan, and bake at 350 F for about 40 minutes or until the stick comes out clean.
Let it rest for 15-20 minutes before cutting into desired shapes.
OPTIONAL STEP
Once the bread is cut into pieces, pan fry it in oil or ghee to make it slightly crunchy from both sides.
Serve this warm with tea or coffee !
